When Helly Scholten heard about an opportunity to move into a home tucked inside a greenhouse for three years as part of an experiment, she jumped at the opportunity. The very unique living quarters, also known as the Concept House, was designed by students at the University of Rotterdam in the Netherlands to push the limits of sustainability. Now, Scholten says she couldn’t imagine living anywhere else. The botanical stylist, her husband, her two teenage daughters, and her pup all moved in last June and have grown accustomed to the perks of the premises. For starters, there’s an “edible roof,” which features a 1,450-square-foot vegetable garden. It produces tomatoes year-round and all the veggies the family could possibly want for their “greenhouse shakes” (read: green smoothies). Read more.
